Avocado Toast with Microwave-Cooked Egg

Everyone loves avocado toast. And if you use the microwave for cooking your eggs, it is quick to make with less cleaning to do. Whole grain bread and fresh farm eggs elevate this dish. It is a breakfast that you will crave even when it is not breakfast time. Use ripe avocados for a creamier texture. Sprinkle chopped, crispy bacon on top to add another layer of flavors and textures.

Serves 2

  • 1 large ripe avocado

  • 1 teaspoon lime juice

  • ⅛ teaspoon salt, divided

  • ⅛ teaspoon ground black pepper, divided

  • 1 teaspoon unsalted butter, softened

  • 2 large eggs

  • 2 thick slices of whole-grain crusty bread

  • Smoked paprika to taste (optional)


Omnipan – Small and Medium

  1. Halve the avocado, remove the pit, and scoop out the flesh with a spoon into the small Omnipan. Mash it roughly with the back of a fork. Add the lime juice and half of the salt and black pepper. Mix well to combine. Cover the Omnipan with the lid and set it aside.

  2. Spread the softened butter at the bottom of the medium Omnipan. Crack the eggs on top of the butter. Set the Omnipan without the lid in the microwave. Cook it for 40 seconds at 50% power.

  3. Check if the egg whites are fully cooked. Once cooked, they should be opaque. If not cooked, microwave at 7-second intervals until cooked.

  4. Toast the bread in a toaster or on the oven rack at 350 °F or 177 °C for 10 minutes, turning it once in between.

  5. Spread the mashed avocado liberally onto the toast. Place the egg on top of the avocado. Sprinkle the remaining salt, pepper, and paprika (if using). Serve immediately.

  • How to cut the avocado: use a sharp chef’s knife to cut the avocado. Run the knife blade lengthwise all around the pit in a continuous motion. Make sure the knife is touching the pit, but do not exert any pressure trying to cut the pit. Using both hands, twist the 2 avocado halves in opposite directions to separate them from one another. One half will have the whole pit in the center, and the other will have no pit. Fold a kitchen towel so it forms 8 layers. The towel is your protection against any mishaps with the knife. Hold the avocado half on top of the kitchen towel in one hand, aim the knife blade at the pit, and whack it so that the blade cuts into the pit slightly and gets stuck there. Now twist the knife to pull out the pit. Use a spoon to separate the pit from the knife.
