Microwave Eggs & Bacon with Herbs

This dish is a hands-off way to cook a simple yet delicious breakfast. The eggs are cooked in the microwave, and the bacon is cooked in the oven. It does not get any easier than that! The herbs add layers of flavor and freshness.

Serves 1

  • 2 rashers of bacon

  • 1 teaspoon unsalted butter, softened

  • 2 large eggs

  • ⅛ teaspoon salt

  • ⅛ teaspoon ground black pepper

  • 1 tablespoon chopped fresh chives

  • 1 tablespoon chopped fresh flat-leaf parsley


Omnipan – Medium

  1. Line the medium Omnipan with 4 layers of paper towels. Spread the bacon flat in the medium Omnipan, taking care not to overlap. Place 1 paper towel on top of the bacon. The paper towel at the bottom is to absorb the fat released by the bacon. The paper towel on top is to avoid the bacon fat splattering.

  2. Set the Omnipan without the lid in the microwave. Cook on High for 3 to 4 minutes. It is best to stop the microwave after 2 ½ minutes, check the doneness, and continue to cook with 30-second intervals until the desired crispiness has been reached.

  3. Remove the bacon from the Omnipan and set aside. Discard the paper towels so that the Omnipan is ready to cook the eggs.

  4. Spread the softened butter at the bottom of the Omnipan. Crack the eggs on top of the butter. Set the Omnipan without the lid in the microwave. Heat it for 40 seconds at 50% power.

  5. Check if the egg whites are fully cooked. Once cooked, they should be opaque. If not cooked, microwave at 7-second intervals at 50% power.

  6. Place the eggs on top of the bacon. Sprinkle the salt, pepper, fresh chives, and fresh flat-leaf parsley. Serve hot.

  • If you would like to cook the eggs in the bacon fat, omit the butter and cook the eggs in the fat remaining in the Omnipan after cooking the bacon.

  • Microwave at 50% power, so the eggs cook well and do not splatter. Microwaves vary in wattage, so adjust the time based on your microwave.
