Galette with Pears & Plums

This dessert looks complicated and intimidating to make, but I can assure you that it is quite easy! Using a store-bought frozen puff pastry for the crust makes this recipe effortless. After you pull the Galette out of the oven, enjoy the sweet aroma of baked pears and plums. Once you take a bite, savor the warm, buttery crust enveloping the juicy chunks of fruit.

Ingredients

For Crust
 

  • 1 sheet store-bought puff pastry

For Filling
 

  • ¾ cup sugar, divided
     

  • 3 tablespoons ground almonds
     

  • 3 tablespoons all-purpose flour
     

  • 1 large pear
     

  • 3 medium plums
     

  • 2 teaspoons lemon juice
     

  • ¼ cup raspberry or plum preserve, fruit chunks mashed
     

For Finish
 

  • 1 large egg yolk
     

  • 2 teaspoons water
     

  • 2 tablespoons coarse or granulated sugar

Directions

Omnipan – Small, Medium, and Large

  1. Remove the puff pastry sheet from the freezer and let it sit at room temperature for 30 minutes, or until thawed but still cold. You should be able to unfold it without breaking it.
     

  2. Preheat the oven to 400 °F or 204 °C.
     

  3. Place the opened puff pastry sheet on the large Omnipan.
     
  4. Mix ¼ cup of sugar, ground almonds, and flour in the small Omnipan. Spread this on top of the puff pastry, leaving a 2-inch border all around.
     

  5. Cut the fruit in half and remove the core/seeds. Cut the fruit into ¼-inch thick slices. Put the slices in the medium Omnipan. Mix in ½ cup of sugar and lemon juice. Arrange the fruit slices, alternating between plums and pears, leaving a 2-inch border of puff pastry all around.
     

  6. Form pleats on the sides of the puff pastry and fold it over the fruit filling.
     

  7. Mix the egg yolk and water in the small Omnipan to create an egg wash. Brush the puff pastry border with the egg wash and sprinkle the granulated sugar over it.
     

  8. Place the large Omnipan without the lid in the preheated oven. Bake for 25 to 30 minutes, or until the crust has become golden brown. As soon as you remove it from the oven, spread the fruit preserve over the hot filling. When slightly cooled, cut into wedges, and serve warm.

Serving Suggestions

You can serve wedges of the Galette warm or at room temperature, by themselves, or with a scoop of ice cream of your choice.

Notes
  • While arranging the fruit slices, lay the pear slices on their sides and the plum slices facing down, so the red skin faces up. This will make the Galette look more attractive.
     

  • You can use other fruit like peaches, apples, blueberries, or nectarines. The lemon juice stops the cut fruit from browning. The flour, sugar, and almond base keeps the fruit juices from leaking out.
     

  • A traditional Galette is made with pie crust instead of puff pastry, so you can also use a store-bought pie crust instead.
