Microwave-Cooked Indian Spicy Scrambled Eggs

This dish is a popular breakfast item served in the roadside cafes of Mumbai, India. It is usually paired with soft bread rolls slathered with butter. It might even get included in your comfort food rotation. These eggs are packed full of flavor. Add more chili peppers to bring on the heat or use less for subtle warmth. It is a breeze to cook these in the microwave.

Ingredients
  • 1 small yellow onion, chopped
     

  • 1 small green bell pepper, chopped
     

  • 1 teaspoon finely chopped Jalapeno pepper
     

  • ½ teaspoon salt, divided
     

  • ¼ teaspoon ground black pepper
     

  • ¼ teaspoon ground turmeric
     

  • 2 tablespoons unsalted butter, melted
     

  • 4 large eggs, at room temperature
     

  • 2 tablespoons whole milk, at room temperature
     

  • 1 small tomato, chopped
     

  • 2 tablespoons chopped cilantro for garnish
     

  • Lemon wedges for garnish (optional)

Directions

Omnipan – Large

  1. In the large Omnipan, mix the onion, green bell pepper, and Jalapeno pepper. Sprinkle ¼ teaspoon salt, black pepper, and ground turmeric on top. Drizzle the melted butter and mix well to coat the veggies with the spices and butter.
     

  2. Place the Omnipan without the lid in the microwave. Cook on High for 3 minutes, or until the veggies are tender. Note that they will finish cooking with the eggs later. Set the Omnipan on the kitchen counter and let the veggies cool for 10 minutes.
     

  3. In a medium bowl, beat the eggs, milk, and remaining ¼ teaspoon salt for 2 minutes, until the egg whites and yolks are mixed well. Pour the eggs into the Omnipan with the veggies. Add the chopped tomatoes. Stir to combine.
     

  4. Set the Omnipan without the lid in the microwave. Cook on High for 45 seconds. Stir well, scraping down the sides. Return the Omnipan to the microwave for 30 seconds. Repeat this process, stirring every 30 seconds for up to 2 minutes 45 seconds total.
     

  5. Remove from the microwave, put the lid on the Omnipan, and let it stand for 1 minute. Sprinkle the chopped cilantro on top. Serve with a lemon wedge (if using).

Notes
  • Sprinkle cheese on top before serving. Serve with a buttered toast of your choice with ketchup on the side. You can also use this as a filling in a breakfast wrap or sandwich.

  • Adjust the type and quantity of chili peppers to control the heat. For milder heat, remove the white pith and seeds from the Jalapenos before chopping. For a higher level of heat, use Serrano chilies with the seeds. Cooking the chilies in the oven reduces their pungency.
