Microwave Bread

Although it does not have the crust or light brown color on top, this microwave-cooked bread is light and airy. It has a fluffy texture similar to Oriental steamed buns. And the best part is, it only takes about 4 minutes to bake!

Serves 2

  • 1 tablespoon + ½ teaspoon unsalted butter, melted

  • ¾ teaspoon active dry yeast

  • ¾ teaspoon sugar

  • ¾ teaspoon salt

  • ½ cup lukewarm water

  • 1 ⅓ cups + 1 teaspoon all-purpose flour

Omnipan – Small and Large

  1. Pour the water into the small Omnipan and heat it in the microwave for 10 seconds, so it is slightly warmer to the touch.

  2. Add the butter, yeast, sugar, salt, and warm water to a bowl. Mix well to combine. Add in the flour, ½ cup at a time. Mix well before incorporating more flour.

  3. Dust your work surface with 1 teaspoon of flour. Turn out the dough onto the work surface and knead it for 8 minutes.

  4. Brush the insides of the large Omnipan with ½ teaspoon of butter.

  5. Place the dough inside the Omnipan. Cover it lightly with plastic wrap, leaving enough space for the dough to rise. Set aside for 1 hour.

  6. Remove the plastic wrap. Place the Omnipan in the microwave. Microwave on high for 4 minutes, or until the internal temperature of the bread is 200 °F.

  7. Remove from the microwave, and let the bread cool in the Omnipan for 5 minutes. Then turn out onto a rack and let cool completely before serving.

  • When measuring flour, spoon it into a dry measuring cup and level off the excess. (Scooping directly from the bag compacts the flour, resulting in dry baked goods.)
