Microwave Cherry-Almond Crisp

If you are looking for an easy dessert to make but has a myriad of flavors and textures, look no further! This crisp has juicy cherries bursting with flavor and crunchy almonds to round out every bite. The best part is you only need the microwave to bake this delicious dessert.
 

Prep Time - 15 Minutes

Cook Time - 20 Minutes

Serves 6

Ingredients
  • 4 tablespoons unsalted butter, cut into small pieces
     

  • ¼ cup + 2 teaspoons all-purpose flour
     

  • 2 tablespoons light brown sugar, packed
     

  • 2 tablespoons sliced almonds
     

  • 2 tablespoons old-fashioned rolled oats
     

  • ⅛ teaspoon ground cinnamon
     

  • ¼ teaspoon salt
     

  • 1 16-ounce bag frozen cherries
     

  • 2 tablespoons granulated sugar
     

  • 1 tablespoon lemon juice
     

  • ½ teaspoon pure vanilla extract

Directions

Omnipan – Large

  1. Place half of the butter pieces in the large Omnipan. Put the Omnipan without the lid in the microwave. Microwave on high for 45 seconds, or until the butter has melted. If not melted, microwave at 5-second intervals.
     

  2. Add ¼ cup of flour, brown sugar, almonds, oats, cinnamon, and ⅛ teaspoon salt to the Omnipan. Stir well to combine.
     

  3. Spread the streusel evenly in a single layer.
     

  4. Place the Omnipan without the lid in the microwave. Microwave on high for 3 minutes, stirring halfway through. Remove the Omnipan from the microwave and stir. The streusel should be golden brown. If not golden-brown, microwave at 15-second intervals. Set aside.
     

  5. In a large bowl, pour the remaining 2 teaspoons of flour, cherries, granulated sugar, lemon juice, vanilla extract, and ⅛ teaspoon salt. Mix well to combine.
     

  6. Pour the cherry mixture into another large Omnipan. Sprinkle the remaining butter pieces on top.
     

  7. Put the large Omnipan without the lid in the microwave. Microwave on high for 16 minutes. Remove from the microwave and stir the cherry mixture. If not cooked, microwave at 1-minute intervals.
     

  8. Let the cherry mixture cool for 10 minutes. Sprinkle with the streusel topping and serve.
