Microwave Ratatouille

Eggplant, summer squash, and tomatoes. This dish is as delicious as it is colorful. When making traditional Ratatouille, you need to prepare and cook each vegetable separately. But you can slice and assemble everything in your Omnipan for the microwave-cooked version of this dish, simplifying the whole process. The perfect accompaniment to any meal!

Serves 4

  • 1 medium yellow onion, sliced ¼ inch thick

  • 2 garlic cloves, minced

  • 3 oil-packed sun-dried tomatoes, chopped

  • ¼ cup extra-virgin olive oil

  • 1 teaspoon chopped fresh thyme

  • Salt and freshly ground black pepper to taste

  • 1 small eggplant, sliced into ¼ inch thick rounds

  • 1 small zucchini, sliced into ¼ inch thick rounds

  • 1 small yellow squash, sliced into ¼ inch thick rounds

  • 2 plum tomatoes, sliced into ¼ inch thick rounds


Omnipan – Large

  1. Add the chopped onion, garlic, sun-dried tomatoes, 1 tablespoon of olive oil, ½ teaspoon of thyme, salt, and pepper to the large Omnipan.

  2. Place the Omnipan with the lid in the microwave. Microwave on high for 7 minutes, or until the chopped onion is soft and translucent. If still raw, microwave at 30-second intervals.

  3. In a bowl, add the eggplant, zucchini, plum tomato, and yellow squash slices, 2 tablespoons of olive oil, the remaining thyme, salt, and pepper. Mix to combine.

  4. In the large Omnipan, spread the cooked onions evenly. Place the vegetable slices in a circular pattern on top of the cooked onions, alternating vegetables.

  5. Place the large Omnipan with the lid in the microwave. Microwave on high for 9 minutes, or until the vegetables are cooked through. To check if the vegetables are cooked through, insert a toothpick into a vegetable slice. If the toothpick glides easily, the vegetables are cooked. If not cooked, microwave at 30-second intervals. Remove from the microwave.

  6. Remove the lid from the Omnipan and place it back in the microwave. Microwave on high for 3 minutes to evaporate excess moisture. Drizzle with the remaining tablespoon of olive oil. Serve hot.
